Most bread machines use a variety of timed programs
for preparing dough. For simplicity and as a general
guide we will outline the three most popular programs here. Please refer to your bread machine manual when preparing one of our recipes and choose the closest matching program.


Basic
This program is used the most frequently. The bread machine kneads the dough three times before allowing the dough to rise and bake. This program requires 3 hours in total.


Quick
For preparation of white and mixed bread. The bread machine kneads the dough twice. The process of rising of the dough is shortened, so loaves will require less time but will be smaller. This program requires 2 hours and 30 minutes in total.


Whole Wheat
For the preparation of whole wheat bread with sour dough and yeast. The bread machine kneads twice and the dough rises and bakes for a longer period. This program requires 3 hours and 40 minutes.
